Here they're in the middle of the process, taking the dipped wheels off and putting the fresh wheels on in preparation for the next dip.
A red wax dipping vat.
They buy wax in wafers and melt then in the vats. The vats are fairly hot, one of the women tells me they're around 190-degrees Fahrenheit.
After the dipped cheese wheels cool, they package them up for shipment. These suckers weight between 20 and 25 lbs. Typically a store will receive such a shipment and cut up the cheese, rarely a store will retail their cheese as a full wheel of this size.
